We were out tonight, but here's what I made last night that is SO quick...
Asian Chicken & Pasta
1 No-yolks or wheat egg noodle pasta package
1 Broccoli slaw package
1 lb of cooked, cubed chicken (I prefer to use canned or pre-cooked chicken...though sometimes pricey, so FAST). Can also sub out pork.
Red Pepper Flakes
1 can chicken broth (mix some of this with 1 tbsp cornstarch)
1/4 cup terayaki sauce (or whatever asian sauce you have on hand)...sometimes I use more depending on what I feel in the mood for :P
Green onions
Garlic to taste
Directions:
Cook pasta according to directions. With 4 minutes left, add the broccoli slaw to the cooking pasta pot and let it boil together for the remaining time. Saute garlic and green onions in a little oil with the pepper flakes. Add the sauce, chicken, chicken broth, and cornstarch/chicken broth mixture. Bring to a boil and let simmer until thickened.
Very fast, very healthy, very yummy :).

Quick and easy chili (Hubby made for our lunches tomorrow)
1 lb ground beef
1 canned condensed tomato soup
1 can beans of your choosing...I prefer light red.
Chopped bell pepper, optional
1 Onion
1 tbsp chili powder
1 tbsp sugar
Brown ground beef. Add in onions and peppers, until veggies are softened. Then, add tomato soup in its condensed form, the beans with juice, chili powder, and sugar. Stir and let simmer for about 15-20 minutes until thickened. Can vary recipe any way you like, but it's always good and it's fast.
