Re: WFD??? I need ideas I feel like I always make the same food.

Here are a couple of really easy recipes I've done recently!

    Calzones:

Take one can of Pillsbury pizza crust. Roll it out and cut it into 4 rectangles. Mix 3/4 cup shredded mozz cheese with 1/4 cup caesar dressing. (or do more if you like lots of cheese) Put deli chicken slices on top of the pizza crust, then top with the cheese mixture and sliced tomato. Fold the pizza crust over in half and seal the edges. Bake at 400 F for 12-14 minutes.

    Sausage Brunch Dish:

Grease a 10x13 baking dish. Unroll a can of Pillsbury crescent rolls, press all the divisions together so it's one big rectangle and place it in the bottom of the dish. Fry up some sausage meat (I used chorizo....just slit the casing and dump the meat out into the pan) and spread it on top of the crust. Spread 2 cups of shredded mozzarella cheese on top of that. Throw in some chopped red/green peppers too if you like. Then beat 4 eggs, add 3/4 cup milk along with 1/2 tsp onion salt and 1/4 tsp black pepper. Pour the egg mixture on top of everything else. Bake at 425 F for 15-20 minutes until a knife inserted comes out cleanly.

(this one was AMAZING, we had it for dinner then the next night we had the leftovers cold and it was delicious like that too)

    Cheesy Chicken Pot Pie:

In a 10x13 baking dish mix together 3 cups cooked chopped chicken, 3 cups frozen vegetables, 2 cups shredded cheddar cheese, and one can of cream of chicken soup. Spread it evenly in the dish. Unroll a can of Pillsbury crescent rolls and press it together so it makes one big rectangle, place over the top of the chicken mixture. Bake at 375 F for 20-25 minutes.

    Saucy Parmesan Chicken:

Mix together equal parts parmesan cheese and zesty italian dressing (for 4 chicken breasts use 1/4 cup each) in a large ziploc bag. Put chicken in the bag and squish to make sure it's all covered with the sauce. Let lie flat in the fridge for at least 30 minutes. Bake at 425 F for 20 minutes. (I recommend lining the baking pan with foil first to minimize cleaning time Smile)

    Crispy Chili Chicken:

Take one package of extra crispy shake 'n bake and empty it into the bag provided. Add 4 tsp of chili powder and 1 tsp of garlic powder. Mix it all together. Coat your chicken in the mixture and bake at 425 F for 20 minutes.

And pretty much every single one of those can be made in advance, left in the fridge, and then just put in the oven when you get home from work!

Ooh...these do sound delicious and very kid friendly. I'm printing them out now, so that I can add all these Pillsbury items to my shopping list. Thanks!

Re: WFD??? I need ideas I feel like I always make the same food.

We were out tonight, but here's what I made last night that is SO quick...

    Asian Chicken & Pasta

1 No-yolks or wheat egg noodle pasta package

    1 Broccoli slaw package

1 lb of cooked, cubed chicken (I prefer to use canned or pre-cooked chicken...though sometimes pricey, so FAST).  Can also sub out pork.

    Red Pepper Flakes

1 can chicken broth (mix some of this with 1 tbsp cornstarch)

1/4 cup terayaki sauce (or whatever asian sauce you have on hand)...sometimes I use more depending on what I feel in the mood for :P

     Green onions

    Garlic to taste

    Directions:

Cook pasta according to directions.  With 4 minutes left, add the broccoli slaw to the cooking pasta pot and let it boil together for the remaining time.   Saute garlic and green onions in a little oil with the pepper flakes.  Add the sauce, chicken, chicken broth, and cornstarch/chicken broth mixture.  Bring to a boil and let simmer until thickened.

Very fast, very healthy, very yummy :).

    _______________________________________________________________

Quick and easy chili (Hubby made for our lunches tomorrow)

    1 lb ground beef

    1 canned condensed tomato soup

1 can beans of your choosing...I prefer light red.

    Chopped bell pepper, optional

    1 Onion

    1 tbsp chili powder

    1 tbsp sugar

Brown ground beef.  Add in onions and peppers, until veggies are softened.  Then, add tomato soup in its condensed form, the beans with juice, chili powder, and sugar.  Stir and let simmer for about 15-20 minutes until thickened.  Can vary recipe any way you like, but it's always good and it's fast.

I should add that we use the asian chicken sauce mixture over the noodles and slaw.  It doesn't make a ton of sauce, so you may want to make more :P.  Again, vary it as you please.  Last night I added bell peppers, which was tasty, too.

I just like to throw stuff together...

2 large chicken breasts cooked in bbq sauce in the oven

    1 lbs of spiral noodles

    velveeta cheese

    1/2 sweet onion

    extra bbq sauce

Once the pasta is cooked I mix the cheese in (you can add more or less if you like) I sautee the onion and add it in, and once the chicken is cooked I shred it with a fork and throw it in, add more bbq sauce and that is it!  I usually serve it with a side of green veggies or salad.  It's quick and easy (I've been known to just 2 packages of the Knorr sides cheddar cheese spirals and that just puts more ingredients together for me).

    Cheesy chicken broccoli casserole

Boil one bag of instant rice

Cut up chicken breast into little chunks, or you can get precooked chicken breast, fry it.

    In a 9x13 pan mix:

Bag of rice, one bag  frozen broccoli, One jar of cheese sauce, (I use ragu) and chicken, one large can cream of chicken or mushroom soup. Bake at 350 for 1/2 hour to 45 minutes.

I'm making one of our favorites tonight: Sour Cream Chicken Enchiladas! it's a healthy recipe but it doesn't seem like it :)

    Ingredients

16 oz. fat free sour cream
1 can fat free cream of chicken soup
1 tbls. fresh chopped cilantro (1/2 tbls. dried)
2 1/2 cups cooked shredded chicken breast
      1 can Mexican Rotel
      1 cup chopped onions
      16 corn tortillas
8 oz. shredded pepper jack and colby cheese blend
      1 can diced green chiles

    Directions

In a saucepan, mix together sour cream, soup and cilantro. Heat through and set aside.

Combine the chicken, Rotel, onions and green chiles in a pan sprayed with cooking spray. Heat until onions are transparent.

Warm the tortillas until flexible. Then, fill each tortilla with about 2 tbls. of the chicken mixture and about 1 tbls. of the cheese. Roll tortilla up and place seam side down in a 8x11 dish sprayed with cooking spray.

Pour over the sour cream sauce and top with the remaining cheese.

Bake in a 350 degree oven for about 30 minutes or until heated through.

Makes 8 servings of 2 enchiladas each.

    Number of Servings: 8
