LOL...I wouldn't let him hit the cheese too hard because it could constipate him terribly.  Personally, I would not offer cheese for a few weeks and offer a variety of table food diced up.  He WILL eventually eat something.  It really is important for him to learn to eat a variety of foods.  DD always ate everything, once we started table food DS was very picky.  I made the mistake of just giving him the things I knew he would eat and at 4 1/2 he is almost impossible to feed without hearing a bunch of whining over what he doesn't like.  I have a 9 month old right now and am determined not to make the same mistake.

You have to pick your battles.  I'm a "softy", I give in.  What if you offered him cheese with his meals but only in small amounts?  Just make sure he's drinking enough water/juice or eating enough veggies and that should balance out the cheese.  LOL, sounds like you have a former mouse and I have former monkeys!  They'd eat bananas till the cows came home.  But they eat a well balanced diet so I don't worry so much AND they aren't constipated so it's all good.
